    To soak the rice, take rice in a large mixing bowl & add salt.

    Pour water & soak the rice for 30 minutes.

    To prepare for seafood paella, cut the onions into rings.

    Clean the squid & cut into rings.

    Cut through prawn shells along the top of the back with a small, sharp knife.

    Cut a shallow slit along the back of each prawn through the opening and lift out vein with the tip of the knife. Wash & keep aside.

    Heat the oil in a heavy bottom pan then add sliced onion rings & finely chopped garlic. Saute for 2 - 3 minutes or until it turns translucent.

    Add finely chopped red & green capsicums & green peas. Stir them frequently.

    Add squids, prawns & sprinkle salt on the top.

    Add water & bring to boil. Cover & cook for 5 -10 minutes or until the shrimp turns pink.

    Reduce the heat & add washed rice.

    Cover with lid & let it simmer for 10 -15 minutes or until the rice is cooked. Check occasionally.

    Finally, add saffron strands on the top & cover. Cook on low heat for another 5 minutes.

    Mix well & spread the rice out evenly in the pan.
