    While making onion pakoras the most important is to have the onions sliced very thin and fine. They should be soaked in salt water and drained well. Also the batter should contain rice powder if the pakoras are to stay crisp and crunchy for a long time. Moreover, care should be taken to immediately fry the batter in oil rather than making and keeping it aside. Else the pakoras would absorb a lot of oil and would become soggy in a while
