Finely chop the tomatoes. Peel the carrot skin & grate the carrot.

In a pan heat the corn oil over the medium heat then add onion & garlic. Saute till turns brown color.

Add lamb & fresh tomatoes saute for few minutes.

Then add tomato paste, arabic spices, turmeric, white pepper.

Add salt, dry lime, cardamom, bay leaves. Mix all the ingredients well & saute for about one minute or till the raw smells disappear.

Add water then bring to boil. Reduce heat & cook for 45 minutes or until the lamb is cooked.

Whisk well till all the ingredients are combined well.

To prepare for the garnish, take a pan heat the oil then add almonds, pinenuts & raisins. Saute for 5 minutes or until it turns golden brown
