    Finely chop the onion, baby marrow, spinach & celery

    In a big heavy bottom pan heat olive oil & add chopped onions. Sauté till onion turns light brown color.

    Add chopped celery & sauté till you get a aroma of the mixture.

    Add the brown lentils and mix well. Simmer for 5 minutes

    Now add cumin powder, white pepper powder, salt and chicken stock & mix well.

    Add water & stir. Bring to boil then reduce the heat and cook for around 45 minutes or until the lentils are very soft.

    Once cooked, add the chopped spinach & the baby marrow and cook for 5 minutes or until baby marrow turns tender.

    Finely chop the fresh coriander.

    Once the lentil & vegetables are fully cooked, add lime juice and chopped coriander leaves. Mix them well.
