How to make PURPLE YAM MUFFIN RECIPE recipe

1. The ingredients quantity can be set as per your serving requirements. We recommend you set before you start cooking.

2. In a big sauce pan, boil the yam with water until it is tender.

3. Using a small knife, peel the yam and mash it.

4. Roughly chop the pecan nuts.

5. To prepare the pecan streusels, in a bowl mix chopped pecan, brown sugar, oats and butter. Mix them well & keep it aside

6. In a separate bowl, beat the melted butter, egg and vanilla extract.

7. Then add brown sugar, purple yum flesh and mix it well.

8. Sift flour together with the baking powder and salt & kept aside.

9. In the mashed yam mixture, add yogurt and beat.

10. Then add oats and flour mixture.

11. Lastly add the chopped pecan and fold.

12. Place muffin cups in the muffin tray and scoop enough batter to fill half of the cup.

13. Top each muffin with pecan streusels.

14. Bake at 150° / 330℉ for about 20 to 25 minutes or until a toothpick inserted into the centre of the muffin comes out clean.

15. Cool for 5 minutes and serve.
